GAS RANGE
Gas is preferred to electric burners because it's easier to control
the heat source. With a gas range, you just adjust the flame to the heat
required. With an electric burner , you must wait for the burners to either
get hot enough or cool down to the proper temperature.
If you do have an electric range top, and are turning out a meal requiring
various temperatures, I do have a "trick" for you. Turn on all
the burners to different settings, low, medium and high and rotate the pans
according to the necessary temperature. This isn't fuel efficient but much
quicker and less aggravating to the cook.
